Prep. time 15 min + bake time 10 min
You will need, for 12 cookies:
6 tbsp. gluten-free oats
6 tbsp. almond powder
2 tbsp. coconut sugar
60g. melted butter
2 pinches of quality sea salt
1 tsp. baking powder
1 pinch of cinnamon
Optional: 1 tbsp. chocolate chips
Pre-heat the oven to 180°C.
In a large bowl, mix all dry ingredients. Add in the 2 eggs, then the butter. Mix well.
Leave for 10 min.
Lay a baking tray with baking paper.
Lay balls of dough onto the tray using an ice-cream scoop.
Make sure you leave enough space between each cookie as they will expand.
Bake for 10 min. Leave to cool on a grid.
