Cranberry & red onion jam
As a condiment to your meats, game and cheese boards.
Prep time 10 min + cooking time 10 min

You will need, for 250ml of jam:
- 5 red onion
- 1 tsp. butter or coconut fat
- 2 tbsp. honey or agave syrup or coconut blossom sugar
- 500g dried cranberries
- 1 cup filtered water
- sea salt
Slice the onions very (very!) thinly.
In a large pot under high heat, melt the butter / coconut fat and throw in the onions.
Stir well and leave for 2 minutes.
Reduce the heat to medium/low and let the onions sweat until translucent and soft.
Meanwhile, chop finely the cranberries then add to the pan.
Reduce the heat to low then add the honey. Stir well and let caramelise until brown.
Add a pinch of salt and the cup of water and leave to simmer for 10 minutes while continuously stirring.
Leave to cool before packing in a clean jar and keep in the fridge for up to 5 days.
