You will need, per person:
200g. kale leaves
1 tbsp. extra virgin olive oil
quality sea salt
1 tbsp. honey or maple syrup or agave syrup
Remove all kale stems so all you have is leaves.
Preheat the oven to 120°C.
Mix all ingredients in a very large bowl.
Line a baking tray with baking paper.
Spread the kale over the tray evenly.
Bake for 5 min or until crispy. Check regularly that it doesn't burn, you may need to flip your tray to ensure even baking.
Leave to cool on the tray of in a large flat dish, then onto a serving bowl. If you place the kale warm in a bowl, the moisture will soften the crisps again as they cool.
