Rucola-Pear-Parmesan Salad

Italian-inspired starter or side salad. Just because.

You will need, per person:

- 100g rucola (rocket salad)

- 1 big pear - ideally Comice, French Butter or Anjou variety.

- 40g parmesan

- 1 tbsp. balsamic vinegar

- 2 tbsp. extra virgin olive oil

- fresh basil

- sea salt and pepper


Break the salad and basil into smaller pieces with you hands. Prepare the sauce with the vinegar, olive oil, salt and pepper. Pour and mix well. Slice thinly the pear and add. Grate thinly the parmesan and add. Mix well.

Let sit for 5-10 minutes if possible and enjoy.
