Refreshing, juicy and crunchy salad, ready in 10 minutes.
You will need, for 2 portions:
- 1 large fennel
- 150g green olives (drained weight)
- 2 tbsp olive oil
- 2 tbsp raw ACV
Remove the branches and greens from the fennel if any. Cut it into 4 (length and width), then shave it thinly using a slicer. Drain the olives and chop them grossly.
Toss into a salad bowl and add the oil and vinegar. Mix well and leave to marinate for 10-15 minutes.
